Breast of Veal in Dark Beer
| 3 lbs. Breast of Veal | Pinch of nutmeg |
| 3 tablespoons of butter | 1 sliced Spanish onion |
| Flour, salt, pepper | 1 1/2 cups dark beer |
| 2 cloves |
Have the butcher remove bone and roll meat. Rub with butter, flour, salt and pepper. Place on rack in open roasting pan and sear in hot oven of 450 degrees to 500 degrees Fahrenheit. When lightly browned, add cloves, nutmeg, onion and beer; cover pan, reduce oven heat to 325 degrees. Bake for 1 hour and 15 minutes.
