Wash and dry the potatoes and put them into a preheated 220º C oven for 45
minutes, until they are roasted.
Soften the butter slightly, mix it with the parsley, season with salt and
pepper, and put in the fridge until serving time.
Heat a spoonful of oil in a frying pan, and fry the bacon for a few minutes until golden brown.
Mix the onion, lemon, beer (Negra Modelo®), salt, and pepper. Add the beef
and bacon, cover, and and leave to marinade in the fridge for six or eight
hours.
Remove the marinated meat and prepare the kebabs by alternating diced
beef and bacon with slices of onion. Heat three dessertspoons of beer and add a
few threads of saffron. Sprinkle the kebabs with this mixture and broil them
over charcoal.
Serve with the roasted potatoes and a little of the refrigerated
butter mixture. Garnish with roasted tomatoes.
